Any type of beans can be used including kidney beans black beans white beans and pinto beans and some cooks like to use a blend of beans to enhance the flavor and make the dish more interesting.
They re a medium to large bean. Though very similar to and often confused with kidney beans they re actually different. They retain their firmness and shape under heat are very hearty and absorb spices and flavors nicely. Red and white kidney beans which are also called cannellini beans are the more common but with some searching you can also find purple kidney beans black kidney beans and even spotted kidney beans.
These beans can also work in sweet dishes. Heat the oil in large pot or dutch oven over moderate heat. In red chilies red and brown beans such as light and dark red kidney beans add protein and thick texture when simmered with tomato sauce beef and spices. Vegetarian chilis are essentially traditional like chili con carne but made without meat.
Some vegetarian chili recipes will add other types beans like kidney cannellini or black beans to the recipe while others add meat substitutes like tofu or tempeh to mimic the texture of meat. Chili beans are basically chili con carne with a focus on the beans rather than on the meat. Red beans are smaller and rounder in appearance although they can be used in very similar ways. Typically pinto beans though michigan great northern beans and kidney beans are often used in chili.

Kidney beans are commonly eaten in chili and come conveniently canned. There is a brand of pinto beans available in the south and southwest called ranch style beans which are canned with a chili sauce.
